I can’t believe the time has come! Summer is nearing its end and I can’t think of a better way to say farewell than with a date night at home with a glass of J. Lohr Estates Riverstone Chardonnay and something yummy to munch on! I decided to craft a pasta salad with a caprese twist (why not combine my two favorites?!) and my goodness, was it delicious!This recipe is tasty but the real treat is what you pair it with! J. Lohr Estates Riverstone Chardonnay is a fresh and youthful wine with a hint of white peaches, floral, citrus, baking spices, and honey. Yes, it’s just as good as it sounds! A crisp glass of Chardonnay pairs perfectly with this Easy Peasy Caprese Pasta Salad Recipe. Doesn’t that sound refreshing?!
INGREDIENTS:
Approximately 1 Pound of Penne Pasta
3 Cups Arugula
Your choice of Olive Oil
Sea Salt to Taste
Pepper to Taste
8 Ounces Mozzarella (or Mozzarella balls!)
2 Cloves Minced Garlic
2 Cups of Sliced Cherry Tomatoes
1 Cup Basil Pesto
HOW TO:
Cook 1 pound of Penne according to pasta instructions. Heat olive oil on low/medium, add in garlic and cook for about 30 seconds. Add in cherry tomatoes, cook for 3-4 minutes without bruising tomatoes. Add arugula to skillet, cook for 1 minute. Add in pasta, mozzarella, and basil pesto – toss everything together and warm on medium/high heat. Sprinkle with sea salt and pepper to taste. Move dish to serving bowl and toss with a splash of J. Lohr Estates Riverstone Chardonnay!
